When I was a kid, my mother made cakes for extra money. It was during this time that I learned my favorite part of a cake was the “brown stuff,” which mom peeled off the top of the cake and onto a piece of wax paper. I would run my tiny thumb across the wax paper and watch the brown stuff accumulate onto it before licking it off. I predict that once people catch on to this neglected part of cakes, we’ll finally see the end of these overpriced cupcake joints and the rise of brown stuff shops. I’ll be first in line.
